If you’ve ever made sushi rice and biryani in the same week, you already know something strange is going on. One clumps together like it’s trying to hold hands. The other falls apart into loose, separate grains that barely touch. Same ingredient, wildly different results. So what’s actually happening here?
It comes down to one thing most people never think about at the stove: starch. Specifically, two types of starch molecules that exist inside every grain of rice, in different ratios depending on the variety. Understanding this one piece of chemistry will change how you cook rice forever, and it’s a lot less complicated than it sounds.
The Two Starches Inside Every Grain
Rice is mostly starch, and starch itself is made of two molecules: amylose and amylopectin.
- Amylose is a long, straight molecule. It doesn’t dissolve easily and doesn’t like to bond with its neighbors. Rice with more amylose cooks up firm, dry, and separate.
- Amylopectin is short and heavily branched, almost like a tiny tree. These branches tangle with each other and trap water, which is exactly what creates that soft, clingy, sticky texture.
Every type of rice has its own natural ratio of the two. That ratio is the real reason your rice behaves the way it does, long before heat or water ever gets involved.
Why Some Rice Varieties Are Naturally Stickier
This is why not all rice is created equal in the pot:
- Sushi rice and glutinous rice are extremely low in amylose, sometimes almost none at all. Nearly pure amylopectin means nearly guaranteed stickiness. Note: “glutinous” here has nothing to do with gluten, it just means gluey.
- Jasmine rice sits in the middle. Some amylose, some amylopectin, which gives it that soft, slightly clingy but still separable texture.
- Basmati and long-grain rice are high in amylose, which is exactly why they cook up light, fluffy, and distinct, and why good basmati is prized for staying separate even a day later.
So before rice even touches your stove, its stickiness potential is already built in.
What Actually Happens When You Cook It
Heat and water trigger a process called gelatinization. The starch granules absorb water, swell up, and eventually burst open, releasing those starch molecules into the surrounding water and onto the surface of the grain.
That released starch, especially the amylopectin, is what makes grains stick to each other. It’s essentially a thin layer of natural glue coating the outside of the rice. The more of it that escapes onto the surface, the stickier your final pot will be.
The Role of Rinsing (and Why Chefs Insist on It)
Here’s where a lot of home cooks get tripped up. Rinsing rice before cooking isn’t a superstition, it’s damage control.
Milling and packaging leave loose starch dust clinging to the outside of raw rice grains. If you cook rice without rinsing it, that surface starch dissolves straight into the water and makes everything gummier than it needs to be, regardless of variety.
Rinse basmati or jasmine rice until the water runs mostly clear, and you’ll immediately get lighter, more separate grains. On the flip side, if you’re making sushi rice or a risotto and you actually want that starch, skip the rinse or rinse very lightly. You’re working with the chemistry, not against it.
Water Ratio, Heat, and Stirring Matter Too
Genetics loads the gun, but technique pulls the trigger. A few things that push any rice toward stickier territory:
- Too much water gives starch more room to dissolve and coat the grains.
- Overcooking keeps grains in hot water longer, breaking them down further and releasing even more starch.
- Stirring while cooking physically agitates the grains, knocking loose starch off the surface, which is exactly why risotto gets stirred constantly and plain steamed rice does not.
- Cooling and resting after cooking allows some of that surface starch to firm back up, which is why rice often separates more easily a few minutes after it’s done.
So, Is Sticky Rice “Bad” Rice?
Not at all, it depends entirely on what you’re making. Sticky rice is exactly what you want for sushi, rice balls, or dishes eaten by hand. Separate, fluffy rice is what you want for biryani, pilaf, or fried rice. The goal was never to eliminate stickiness altogether, it’s about choosing the right variety and technique for the dish in front of you.
