Hold tight, as it won’t be long before you hear about Moringa, the plant that is celebrated as a superfood.
The protein-filled herb which has become available in energy bars and powdered forms mixed into smoothies is steadily gaining popularity due to its detoxification capabilities and unbelievable nutritional properties.
This recipe showed us how powerful and tasty fresh pods can be. Moringa soup prepared with simple ingredients like onion, tomatoes, sweetcorn, green peas, pepper, fennel seeds, ginger, garlic and spices produce a soup that is not just yummy but also superbly healthy too.
Finding fresh Moringa might prove challenging in American or European markets but don’t worry. Thankfully though, it is often frozen or canned for convenience. Anyways, just find some pods or can use stalks somehow; they can make this soup an ideal point to begin the usage of the superfood in cooking.
I am using fresh moringa pods which are easily available in my farms. So I need to start the recipe by cleaning the outer tough skin of moringa pods.
If you using frozen no need to follow cleaning procedure.
Simple Easy Steps
Take fresh moringa and remove strings or can take tin or frozen moringa pods and wash them and keep them aside.
Take a pan heat up with olive oil, add chopped onion, ginger, garlic, curry leaves sauté till soft.
Add cumin seeds, fennel seeds, crushed pepper, funnel seeds and moringa pod sauté for a couple of minutes.
Cover the pan with a lid for another couple of minutes.
Add hot water to cover all the mix.
Cook till moringa pods are cooked from inside it takes about 5- 7 minutes on medium heat.
Remove pan and rest aside to cool down temperature.
Grind all mix into fine paste.
Pass all mix through the sieve in a separate bowl.
Transfer mix into a saucepan and let boil, adjust consistency, seasoning and serve with a garnish with saute sweetcorn and green peas fresh cilantro
