From International Kitchens to Food Innovation

Chef RBS developed his culinary career through professional hospitality environments in the UK, gaining experience with respected organizations and venues including Hilton Metropolitan, Brighton Hospitality Operations, Novotel London Waterloo, InterContinental London, The Savoy, The Dorchester, Lord’s Cricket Ground, Crowne Plaza, and Berkeley’s Scott at Sofitel London Heathrow.

Working in demanding professional kitchens helped shape his approach to:

  1. Culinary excellence
  2. Kitchen management
  3. Food quality and consistency
  4. Food safety and hygiene
  5. Menu development
  6. Large-scale food operations
  7. Team training
  8. Hospitality standards
  9. Efficient kitchen systems

These experiences continue to influence the way he approaches food businesses and product development today.

A Culinary Foundation with a Wider Business Perspective

Chef RBS built his professional foundation through formal education in hotel management and catering, followed by postgraduate studies in kitchen management in the UK and further education in supply chain management in Wales.

This combination of culinary knowledge, international hospitality experience, and supply chain understanding allows him to look at food from more than one perspective.

He considers not only how food is cooked but also how ingredients are sourced, processed, packaged, transported, developed, and ultimately experienced by the consumer.

Researching the Future of Food

After returning to India, Chef RBS expanded his work beyond traditional kitchen operations and began exploring the wider possibilities of the food industry.

His interests include food packaging, food processing, product development, food safety, food technology, QSR innovation, and new food business models.

He is particularly interested in finding practical ways to transform culinary ideas and ingredients into products that can be produced consistently, efficiently, and at scale.

From packaged foods and modern preservation techniques to new food concepts and commercial kitchen systems, his work focuses on connecting culinary creativity with practical food innovation.

Connecting India’s Tribal Foods With Modern Markets

One of the most meaningful areas of Chef RBS’s work is his interest in Indian tribal foods, traditional ingredients, and farm products.

India has an extraordinary variety of indigenous ingredients and agricultural products produced by communities with generations of knowledge behind them.

Many of these ingredients have tremendous culinary and commercial potential, yet they often remain outside mainstream metropolitan food markets.

Chef RBS wants to help change that.

His approach is to explore traditional and tribal ingredients, understand their culinary and commercial potential, and find ways to introduce them to consumers in India’s growing cities.

The objective is simple:

Create greater awareness of these ingredients while creating better market opportunities for the people who produce them.

From Farm to City, Chef RBS believes that innovation should benefit more than the final consumer.

When traditional farm and tribal products are introduced into metropolitan food markets through better food products, menus, and culinary concepts, it can create a stronger connection between producers and consumers.

His work therefore looks at the complete journey:

Farm → Ingredient → Food Innovation → Product → Market → Consumer

The goal is to help create opportunities where producers can receive better value for their products while consumers discover ingredients that may otherwise remain unknown to them.

For Chef RBS, preserving traditional food knowledge does not mean keeping it in the past.

It means finding new ways to give it a future.
