Why Can Leftover Rice Become Unsafe?

Cooked rice contains moisture and nutrients that can allow bacteria to multiply when it is kept at unsafe temperatures. One important concern is Bacillus cereus, a bacterium that can survive cooking as spores.

The risk increases when cooked rice is left at room temperature for too long. Proper cooling, refrigeration and reheating are therefore important parts of safe leftover-rice storage.

How Quickly Should You Refrigerate Leftover Rice?

Refrigerate cooked rice within 2 hours of cooking. If the temperature is above 90°F (32°C), refrigerate it within 1 hour. Divide large amounts into shallow containers so they cool quickly.

Keep your refrigerator at 40°F (4°C) or below. Dividing a large amount of rice into smaller portions can also help it cool more quickly.
