Carrot Soup Recipe: Easy Creamy Carrot Soup

A good carrot soup does not need a long ingredient list or heavy cream to feel rich and comforting.

This carrot soup recipe is one of those simple everyday soups where a few basic ingredients do most of the work. Fresh carrots are gently cooked with onion, garlic and thyme, then blended with vegetable stock until naturally smooth and creamy.

But there is one small step that makes this recipe different.

Instead of immediately adding the stock, I cover the carrots and aromatics and let them cook gently over very low heat for a few minutes. This allows the ingredients to release their aroma gradually before the liquid goes in.

I also like to keep the clean carrot peels instead of throwing them away. They become part of the final presentation, giving the bowl a simple zero-waste chef’s touch.

Ingredients

For the Carrot Soup

  • Carrots, peeled and sliced: 500 g
  • Onion, chopped: 100 g
  • Garlic, chopped: 10 g
  • Fresh thyme: 3 to 4 g
  • Clarified butter: ½ tsp
  • Olive oil: ½ tsp
  • Vegetable stock: 600 ml
  • Salt: 6 g, or to taste
  • Freshly ground black pepper: 1 g, or to taste

For Finishing

  • Fresh coriander: 10 g
  • Olive oil: a few drops
  • Clean carrot peel: reserved from the carrots

Yield: 4 servings

Method

  1. Prepare the carrots: Wash and peel the carrots well, then slice them evenly. Keep the clean carrot peels aside for the final garnish.
  2. Start the base: Heat the clarified butter and olive oil together in a pan over medium heat. Add the chopped onion and cook gently until softened without allowing it to become deeply browned.
  3. Build the aroma: Add the chopped garlic, sliced carrots and fresh thyme. Season with salt and freshly ground black pepper.
  4. Cook gently: Reduce the heat to very low and cover the pan with a lid. Let the carrots and aromatics cook gently for a few minutes. This slow-cooked covering helps the ingredients release their natural aroma.
  5. Add the stock: Remove the lid and pour in the vegetable stock. Bring it to a gentle simmer and cook until the carrots become completely tender.
  6. Blend: Transfer everything to a blender and blend until completely smooth and creamy. If needed, strain the soup for an extra-smooth finish.
  7. Adjust the consistency: Return the blended soup to the same pan. Add a little more vegetable stock if required and simmer for a few minutes. Taste and adjust the salt and black pepper.
  8. Serve: Pour the hot soup into a bowl. Finish with crushed black pepper, fresh coriander and a few drops of olive oil.
  9. Add the chef’s touch: Garnish with a small amount of the clean carrot peel for a simple, natural and zero-waste presentation.
